Our Christmas Through Pictures

Hi there friends! Happy day after Christmas! Did any of you brave the malls today? Not me. Not only because I had to work but I also tend to stay as far away from the malls both the day after Thanksgiving and today.

Anyway, I hope you all had a lovely Christmas – we certainly did! Times like these make me even more thankful for my large family.

Tonight’s post is going to be very picture heavy and just recap of what Christmas looked like for me… so here we go!

After running a few errands on my way home from work on Tuesday, I made my way straight into the kitchen to begin prepping for both a delicious Christmas eve dinner and a yummy Christmas morning spread too!

To start was a giant pot of veggie soup and cornbread for Friday night…

My sis-in-law whipped up a delicious batch of Veggnog to accompany.

My brother and sis-in-law were flying out of town Christmas morning, so a few presents were opened following dinner.

You know the pups were included -they are already loving their first Bark Box delivery!

Lots of laughter! 

My mom did an incredible job with our tree this year – as always! I just don’t know how moms do it all!

We were back in the kitchen early Christmas morning to get everything on the table before anyone had to leave.

The table is almost ready! 

Raspberry Chia Jam

Gluten-free, vegan biscuits… although they tasted pretty delicious, they were slightly crumbly, so next time I make them, I might add a little more liquid and form them a little bit tighter before popping them in the oven.

Vegan Sausage Gravy. This was the latest challenge presented to me by the hub.  Growing up he loved sausage gravy and biscuits. I’ll admit I was a little nervous about this recipe and even about half way into making the recipe but my mom came in and saved the day and turned this gravy into a masterpiece! It was seriously delicious and one that we will continue to  make through the years!

Greek Yogurt Parfaits with Homemade Granola

Fresh Pineapple topped with Coconut, Pecans and Craisins — and — Fruity Green Smoothies

Almost the whole gang – just missing my oldest brother!

And finally it was time to open a few more presents!

He made it! 

We spent the majority of the day just hanging out, enjoying the company and then ended the night with a Christmas fire…

The pups were happy to have a warm place to lay down! They have me trained well, right? 

It is hard to believe that Christmas 2013 has already come and gone! How did you all celebrate Christmas? Do you have any fun traditions?

You and your family are gorgeous!! its weird to see your photos without snow, we have more than usual for this time of year in MN right now. And…are other people in your family vegan/vegetarian? If so, that must be nice! If not, how do you juggle who brings what food to gatherings?

Thank you Katie!! I’m jealous of your snow! I was hoping for at least one flurry! To answer your question, no, I am not only (Greek yogurt eating) vegan in my house but everyone is very health minded, if that makes sense. They are all incredibly open to trying new things and are always so supportive when it comes to having less meat on the table. I always try to make sure I have a little bit of everything so that everyone is satisfied… We do a ton of veggies and then the guys will grill some chicken or fish to go along with the veggies. That seems to work for us these days!
