Ahhh. What a day it has been. Hi friends. How’s it going?
I have finally made it to my old bed at my parents house, ready for a good nights sleep. I’ve been on the road with Dustin for the past week, bouncing around from town to town, studying as much as possible (which means not nearly enough!).
But certainly enjoying my time with this guy! (He loves when I do things like this … he’s always a trooper though!)
The day started hundreds of miles away with a delicious breakfast…
There is oatmeal buried under there somewhere!
As we journeyed back to Georgia, unfortunately there was no time to stop for lunch in order for the hub to make it to the next game on time, so a peanut butter sandwich on Ezekiel Cinnamon Raisin Bread from my travel snack pack had to hold us over until after the game for a late lunch/afternoon snack at Whole Foods.
Raw Kale Salad and a Kombucha…
After a seven hour car ride and a stop to squeeze in a 3 mile run along the way, a home cooked meal was more than welcomed. My mom had the most delicious meal awaiting our arrival…
Mushroom Risotto, Sautéed Brussels Sprouts and Broccolini, Roasted Potatoes, Sugar Peas, and Marinated Cucumber, Tomato, Onion, Avocado and Heart of Palm Salad
I’ll definitely be making a few if not all of these dishes soon! So good! We’ve been trying to eat as healthy as possible on the road, but it still holds no candle to a home cooked meal.
Anyways, I’m off to bed … ready for an early morning workout with the hub, some studying and spending time with the p’s as he hits the road yet again!
