My poor husband, my poor, poor husband. Well, actually he’s the one that first got me interested in nutrition, but I guess he didn’t know I would truly learn to love it. While most men sit on the couch, shoveling down potato chips, my husband gets to chow down on KALE CHIPS! What in the world is that, you ask? I used to wonder the same thing.
Kale is a green vegetable, like broccoli or spinach, that I often read about but have always been too intimidated to try …kind of like artichokes (I’m going to tackle them next :-)). So, finally, a few weeks ago, I decided to be scared no more! It looks like this in the grocery store…
…. not too scary, right? But what the heck do I do with it?
I remembered reading something about kale chips in my favorite health magazine (Oxygen), so I googled ‘Kale Chips’ and sure enough, it was true: Salt and vinegar Kale Chips! I made them for Dustin and I one night and they were absolutely delicious. Crispy, very crispy, salty, tangy, and perfect.
Now they are my favorite lunch side instead of greasy, nasty, trans-fat filled potato chips 🙂 This is what they end up looking like served as a side…along with our ‘Faux’ Fried BBQ Chicken, Corn-on-the-Gob, and Green Peas.
