Happy Friday! I hope your week has been great! Ours certainly has.
As I mentioned yesterday, I spent the afternoon hanging with my brother. Even though we live states away from each other, I love it that we get to see him and my sis-in-law so often. We first stopped by Downtown Alive, a weekly street concert held Thursdays in downtown Greenville, South Carolina.
And then we moseyed over to Gringos, a new fresh-mex restaurant in Greenville for a bite to eat. I had the Asheville, Mexico Tacos which included butternut squash, black beans, fresh corn, lettuce and diced peppers (I had them hold the cheese) on corn tortillas. They were delicious!
I found similar Butternut Squash Taco recipe at Eating Well that I am definitely going to try making when we get home. If you too are a butternut squash fan, give them a try this weekend!
After dinner, my brother and I headed to Fluor Field to catch the Greenville Drive minor league game. The Drive are a Boston Redsox minor league team so the field looks like and is nicknamed the “Mini Fenway.” This stadium is really awesome. How cool would it be to live in one of those apartments that overlook the field?! I think it would be pretty neat.
Anyway, today I plan on getting more work done, hitting the gym and then letting the weekend begin! What are your weekend plans? Have you ever tried Butternut Squash Tacos?
