I know, I was so excited! I love sweet potatoes in the fall too! There’s nothing better! I LOVE the Japanese ones too! The farmers market in the town that I used to live in only had the Japanese variety so they were a staple in our house for a couple of years! Sweet potato as a snack? Sign me up! Thanks for the idea! Especially with the Greek yogurt!? A complete snack!

Oh I’m so envious! Free sweet potatoes!:) Great recipe! I always crave sweet potatoes in the fall, and actually love eating the fun Japanese purple ones the best I have to say though, nothing beats the orange glow of a fresh sweet potato straight out of the oven. I even like my cooled in the fridge and eaten as a snack later! Greek yogurt makes a great topping- so glad you used it in this recipe!:)
