What I Ate Wednesday

Hi friends! How are ya this evening!? Happy Hump Day!

You all know that this isn’t a blog turned food journal where I write about every bite that I eat. Instead, I like to share pictures of a few good meals that I have here and there but never I ate this, then that, then this.

I have never really joined in on the “What I Ate Wednesday” blog posting simply because I don’t want you to think that there is any perfect way to eat. The way everyone eats is unique to them. What works for you might not work for me and vise versa.

With that being said, people really do seem to be interested in talking to others about how they eat… especially a dietitian. Today I am going to share with you what an outline of a typical day might look like for me with the understanding that no two days look alike and that this is just what works for me. The way I eat today was different than how I ate three months ago and I’m sure will be different three months from now. I am constantly in a state of change, always looking for better ways to fuel my body each day.

So, here we go!

My day starts bright and early, always with water first. Two large glasses right when I wake up…

After that, I throw on my gym clothes, grab my bags and drink a large cup of warm lemon water on my way out the door to help aid in digestion, liver function, detoxification, etc. You can read more about why I do that here.

Following the warm lemon water, I reach for a cup of coffee or green tea, depending on how early I got in bed the night before.

On my way out the door to catch the train, I grab my green smoothie (usually something like this: unsweetened almond milk, kale/spinach, frozen fruit, carrots, hemp seeds, chia seeds, maca powder, spirulina, fresh ginger, squeeze of lemon) that was prepped the night before and sip on it in the car…

After a good workout, lasting usually around 45 minutes to an hour, I eat a bowl of overnight oats (oats, unsweetened almond milk, fruit, Greek yogurt, flax meal, walnuts, cinnamon, almond butter and chia jam), again prepped the night before and carried with me to work.

I sip on various kinds of tea all morning long… Anything from green to passion to dandelion.

Lunch is always leftovers from the night before. Usually some kind of entrée or soup and a salad, and also a serving of fruit on the side (not pictured here with yesterdays leftover Chick Pot Pie).

In the afternoon, if I’m feeling hungry I usually always pack a bag of fruit and some nuts (usually apple slices and almonds but I don’t have a picture) or some veggies and hummus…

After arriving home, dinner is a little bit later and is different every night. Anything from tofu, a grain, a veggie and a salad or a one pot dish or soup and a salad, usually always with a glass of red wine.

Dessert varies depending on the day, but it is usually 1 dark chocolate square (not the whole bar as shown below!) …

As you can see, I am definitely a foodie. I certainly am not one to skip meals and find that the harder I workout the hungrier I am.

Again, this is just what works for me. I believe a well-fueled body is key to a productive day. I tell people often, as long a you are eating REAL foods, you’ll be surprised about just how much you can eat!

That all looks so good! I drink a lot of water and tea too, sometimes it gets annoying with the frequent bathroom trips though. However, I don’t think I could drink that much before working out! Do your oats stay cool in your bag or do you pack them in a lunchbox?

It is a lot! And yes, frequent bathroom trips do get old haha! Yes, I pack them in my lunchbox and then put them in the fridge right when I get to work before my workout!

This may be a dumb question, but can you use lemon juice from one of those plastic lemons or does that have junk added to it? Also, do you recommend cayenne pepper with the lemon juice?

How long with green smoothies last in jars in the fridge? Thanks!
