Happy Labor Day Weekend: Bachelorette Fun

Hi friends! I hope you’re having an awesome Labor Day weekend and are all enjoying a little bit of time off! And a giant happy Birthday to my baby sis too!

In other news, as I mentioned Friday, I just returned home from a long weekend at the beach!

A few weeks ago the maid of honor asked me if I would cook for everyone on our last night there. Everyone was in agreement that two nights out was enough and that a night in with a healthy cooked meal and good company would be just perfect. I was super excited when she asked me because I love to show others that healthy food can taste good, but at the same time cooking for a large group, or for anyone for that matter, makes me a little bit nervous. I always worry that someone will eat something they don’t like just because they don’t want to hurt my feelings. Confidence, Ashley, confidence.

 

For roughly $100, I, with the help of many others, successfully fed 15 girls a delicious and healthy meal for our last night at the beach!

 Our menu included:

Black Bean Burgers/ Turkey Burgers on Whole Wheat Buns 

Topped with Avocado, Purple Onions, Tomato Slices and Cheese

Sweet and Baked Potato Fries

Summer Squash and Zucchini Bake

Watermelon

I prepped all of the burgers before I left (24 total), froze them and transported them on ice so that I could spend more time on the beach and less time in the kitchen. Everything else came together fairly quickly. After a faulty grill experience, we ended up cooking the burgers on the stovetop which wasn’t preferential but they were still delicious. This was a great menu to serve so many girls, satisfying veggie lovers, meat lovers and all varieties of appetites.

What’s your favorite thing to make when cooking for a large group? I was thinking spaghetti or even build-your-own pizza but I’m happy with the burger theme I ended up going with!
