Three Years!

Good morning and happy Sunday. I hope you have all had a relaxing and wonderful weekend!

Last weekend, Dustin and I celebrated our third wedding anniversary…one month late. We were married on December 20, 2008 but on December 20, 2011, celebrating was the last thing we had time for. We were mid-baseball camp, staying with Dustin’s parents, trying to get ready for Christmas; as you can see, busy, busy, busy.  I hated to let that day come and go like all others, however, it just wasn’t possible to get away at the time.  We wanted to go up to Chateau Elan fo a quick little get away, but as I already said, it was next to impossible.  We were busy with the baseball camp all week and the following weekend was Christmas.  I was fine with going to dinner or something the following weekend, but Dustin insisted that we can do that anytime and that our anniversary was more special than that.   So we held off.

I am so happy we did.

My dad had been doing work on Jekyll Island and stayed at the Jekyll Island Club a few weeks before and ranted and raved to us about its marvel. Last Sunday, we decided to trust his word and check it out… it was even better that we were only a little under two hours away from it!

We celebrated our anniversary as if it was that day :-).  On the car ride over, Dustin even looked at me and said, “Happy Anniversary!”

When we first arrived, we checked out the resort area and were lead to a delicious lunch on the property in one of the small cottages called Courtyard at Crane.

The menu looked delicious and I even had options to choose from; what a nice change! I went with the Hummas and Veggie Pita over the Portabella Panini. It was delicious!

After lunch, we wandered around some more, waiting on our room to get ready.  The hotel sits on the intra costal waterway and the Marshes of Glynn, so while we didn’t see blue oceans and white sand, it was still a beautiful view.

We spent the rest of the afternoon chatting with another couple we met, sipping the best Bloody Mary’s I might have ever had and watching the football games. Once we were able to check into our room, it was nearly time to start getting ready for dinner in the Grand Dinning Room, yet another delicious, vegan friendly place!

I had already checked out the menu earlier in the day and once I again saw that I had options!  Lucky gal, I was ;-). I knew immediately what I was going to have: the Vegan Tofu Vegetable Potpie. I’m warming up to tofu a little bit more, something I never thought would happen.

It was delicious! I told Dustin that it was the best meal I have had in a restaurant since going vegetarian/vegan. I knew this meal HAD to be recreated, and it was…the very next night when we returned home!

While mine wasn’t quite as delicious, it was a pretty good attempt! I’ll keep working on it for sure.

Anyways, how do you like to spend your anniversary? At home or on the road? I’ll pick a get away any day!
