There is just something about summer that screams smoothie? Right? Well, to me it does! In my quest towards a more vegan life (one day at a time), I’ve been eating less Greek yogurt in the mornings and more Green Smoothies, aka Green Monsters (I bet you didn’t know that there is a Green Monster Movement!).
Anyways, these days, mine and Dustin’s breakfasts have been looking a lot like this…
…and also some over night oats. This is so easy and so healthy…you should give it a try!
Ingredients for 2 smoothies
2 cups greens (I am using spinach or kale right now, next week I’ll use something different though such as bok choy, turnip greens, mustard greens, swiss chard, romaine, celery, etc.)
1 cup almond milk
2 tbsp milled flax seed (or chia!)
2 tbsp almond butter
1 banana (preferably frozen, unfrozen works too)
1/2 cup frozen berries (I mix it up between raspberries and blueberries)
1 scoop vanilla protein powder (optional)
Place all of your ingredients in the blender in the following order: greens, flax, protein powder, nut butter, berries, banana, almond milk, and press GOOOOOO!
Simple, quick, healthy breakfast!
