TOTW: Plan Ahead

Being busy was something I was not, for the past 2 years of my life, I’ll admit it. I was on my own schedule, well really Dustin’s schedule, all day long. Breakfast was when I wanted it, lunch was when Dustin got home from the field, and dinner was when it was ready. There was no rushing around, no ‘snack packs’ except for the daily PB&J that Dustin took to the field.

Now that my schedule is jammmm packed with 21 hours, a new workout program, being a wife, mothering a dog, my best friends wedding date approaching (which happens to include a trip to Vegas this weekend and a fiesta ‘shower’ we’re throwing her in 2 weekends) and simply living, staying healthy is even more important; I can’t get sick or everything will fall out of place.

This is where the tip of the week comes in: PLANNING. Failing to plan is planning to fail. I like to use Sundays as planning days. For example, this past Sunday I made 7 PB&Js on Ezekiel bread w organic crunchy PB and organic fruit only jelly. This way we always have a healthy snack to grab on the run.

My mornings are always rushed so I went ahead and made a huge bowl of steel cut oats w flax seed, a few bananas, cinnamon, and a little agave. This makes healthy eating an easy decision when the guess work is taken out.

If you work in an office, make your lunch the night before. Bring snacks so a trip to the vending machine is out of the option: apples, almonds, carrot sticks, grapes, an orange, Greek yogurt, etc. all make great options.

I also like to make a big quinoa salad for my lunch throughout the week, with quinoa, red beans, sautéed onion, cucumber, a red pepper, EVOO, and balsamic vinegar, this way I know there will be no mess ups.
