March Madness + Healthier Pot Roast Recipe

“Bring it on,” I say! Today is the start of a big week for us down here in Orlando.

First, spring training 2010 starts for Dustin tomorrow.  He’s been working hard and getting ready for this spring training for a year and a half now. He’s ready to be “just one of the guys,” and not, “just one of the rehab guys.”  He’s done all he can physically and mentally, therefore, now it’s time to hand things over to God and let Him do the rest!  The doctor looked at Dustin on Saturday and told him that he was impressed with his healing which is GREAT news!  All I can ask you for is your prayers that things continue to go well :-).

Another major happening for us this week is Chelsea, my sister, is coming to visit!  I haven’t been this excited about something in a long time!  Most of you know, my sister is my other half.  We haven’t seen each other in a month and a half and that’s just too long!  I have lots of fun things planned for us and can’t wait to just chat, laugh, and act like we don’t live 8 hours apart :-(.  She flies in Thursday night so we will probably just spend this night catching up, even though we do talk on the phone for nearly an hour everyday!  Friday night is girls night!  Viviana (my roommate, fellow baseball wife, and dear friend), Chelsea and I are going to a delicious Cuban restaurant, Columbia, for yummy Sangria and then we will head to downtown Disney to see Cirque du Soleil! I cannot wait!  Saturday I’m hoping for pool weather but if it’s a bit too chilly we may head to the field to catch a baseball game, since spring training will be in full force.

Sunday, I’m going to take Chels to our church so that she can see a glimpse of why we love it; I know there will be a wonderful message for us!  After church we are going to stop by the Celebration Market (I look forward to this all week, EVERY week :-))  If you know me, you know how much I love “the market.”  Dustin thinks is crazy how much I love fresh, local produce.  Sounds crazy, but it’s true!  I always stop by the market on the way home from church and the only way I can convince Dustin to go is if I treat him to a smoothie from Smoothie King.

Yesterday, Viviana and Lara (both baseball wives) went with me to the market and then we sat outside a yummy wine cafe and had mimosas and chatted mostly about our baseball filled lives, especially what a blessing the guys (and our own) health is.  The weather was beautiful and it made for a wonderful Sunday Funday.

Last week, I started babysitting again for another baseball family. There are two little girls and they are simply precious;  they are 2 and 5.  I have to babysit again tonight around dinner time and since I’m in charge of dinner, I went ahead and threw something in the crockpot;  I hope it taste as good as it smells.  It is a “healthy” Pot Roast.  Sometimes, I think when I cook the potatoes in with the roast they get too mushy so this time I decided to do a side of “healthier” mashed potatoes.  I found this pot roast recipe in one of my health magazines and did the “use what you have” trick.  Here is the recipe of what I used if you want to try it out…

Healthier Pot Roast:

  • Roast
  • 1/4 c flour
  • 1 large onion, EVOO
  • 6 large carrots, slit and cut into 1 inch pieces
  • 1/2 chopped Bok Choy
  • 2 c sliced Portobello mushrooms
  • 3 minced garlic cloves
  • 1 c red wine
  • 2 c fat-free, low sodium chicken stock
  • 3 tbsp tomato paste

Directions:

  1. Oil large pot, brown each side of the roast.
  2. Place roast in well sprayed crockpot.
  3. Oil same original pot, add onion, garlic, carrots, bok choy, flour, mushrooms, flour, salt, and pepper.
  4. Toss around for about 5 min on med- low heat.
  5. Add wine, chicken stock, and tomato paste and Bring to a boil.
  6. Pour veggies over roast into croc-pot.  Cover and cook on low heat until meat is tender or the boys start asking, “What’s for dinner?”

Mine will be in there all day. Before I leave to go babysit, I’ll probably just turn the crockpot to warm to prevent burning.

Time to start my day, 3 more weeks of P90X (for the 2nd time), ahhhhhh!
